One of Gregory Gourdet’s favorite dishes to make is mashed potatoes. But the former Top Chef contestant and founder of Kann, a Haitian pop-up in Portland, Oregon, didn’t grow up eating the classic side dish.

“I grew up in a Haitian household—we didn’t really eat mashed potatoes,” he says. Instead, his Queens, New York, family ate a lot of rice. But once he started cooking professionally that all changed. “I made mashed potatoes in pretty much almost every restaurant I worked at for like the first five years of my career.”

“My strongest memory of mashed potatoes is probably working at Jean-Georges,” says Gourdet. “When I first started working there, there was a slow-cooked salmon dish with mashed potatoes and truffle vinaigrette—it was really one of the first dishes I had to make in a professional setting. They were creamy and super buttery. It’s just that kind of comforting earthiness that just makes you feel good.”

So when he was considering what to include in his new cookbook, Everyone’s Table: Global Recipes for Modern Health, the chef knew he wanted to feature his signature Dirty Mashed Potatoes. The recipe, however, leaves the standard butter and cream behind for healthier ingredients.

“For me, health is something that’s extremely important,” he says. “I got sober about 12 years ago and changing my diet and changing my outlook on life, that was part of it. I’ve also been traveling around the world and experiencing global flavors. When I think about what I want to eat at home, it’s this health-forward food that doesn’t compromise anything.”

In this case, not compromising on flavor means including cashew cream, a whopping 30 cloves of garlic and plenty of olive oil.

The best part is that these mashed potatoes are fantastically simple to make and “they’re pretty spectacular,” he says. Here are the chef’s tips and tricks for making his deliciously creamy mashed potatoes.

Gourdet’s ideal potato provides a creaminess as well as a backbone of earthy flavor. And since he doesn’t remove the skin (it adds texture and fiber), the chef prefers small potatoes, such as new potatoes, red bliss or fingerlings.

“There are tons and tons of different types of potatoes,” he says. “Some are best for frying, some for roasting and these varieties are best for mashed potatoes.”

While butter and cream usually provide the creamy texture of a decadent bowl of mashed potatoes, Gourdet instead opts to replace the ingredients with alternative fats—nearly a cup of olive oil and homemade cashew cream.

“You can puree cashews with various amounts of liquid to make anything from cashew milk to cashew cream,” he says. And it’s really that easy. After letting the cashews soak in salted water for about an hour, they go into a blender. The resulting cream acts much in the way that heavy cream or half-and-half would. “The cashew cream is really just there for the mouthfeel of it all,” he says. “It doesn’t actually taste like cashews. It’s a lot of potatoes. It’s a lot of olive oil. It’s a lot of onions and garlic. So the cashew cream is really there to kind of be the binder that makes it rich and creamy.”

While the cashew cream may not lend much flavor, Gourdet cooks down two yellow onions and a whopping 30 cloves of garlic, which he then folds into the mashed potatoes. (This along with the skin is what gives it the “dirty”—albeit delicious—quality.)

“The secret to these is really getting those onions and that garlic beautifully caramelized, so you have like this really kind of sweet, savory caramelized onion and garlic flavor,” he says.

After all the ingredients have been incorporated, the final step is a last-minute broil to give the top layer of potatoes a bit of a “crackle.”

“I love that it’s called dirty mashed potatoes,” says Gourdet. “Really just throw everything in the pot and mash it all together. This is truly a decadent dish.”

INGREDIENTS

  • 1.5 cups Raw cashews
  • 2 tbsp Kosher salt
  • 1.5 cups Water
  • .74 cup Extra virgin olive oil
  • 2 Large yellow onions, cut into thin half-moon slices
  • 30 Garlic cloves, sliced as thin as the onions
  • 1.5 pounds Small potatoes

DIRECTIONS

To Make the Cashew Cream:

Combine the cashews, 1 tbsp salt and the water in a small mixing bowl and let the nuts soak at room temperature for 1 hour. (It’s okay if they float.) Transfer the mixture to a blender and blend on high speed until very smooth, about 2 minutes.

To Make the Onions & Garlic:

While the cashews are soaking, heat the oil in a large, heavy skillet (the onions should fit in about two layers) over medium-high heat until shimmery. Add the onions and 1 tbsp salt, stir well, and cook, stirring occasionally, until the onions start to soften and release liquid, about 3 minutes. Stir in the garlic, then reduce the heat to medium, and cook, stirring occasionally, until the onions have a slightly creamy texture and turn golden and even a little brown at the edges, about 7 minutes. Reduce the heat to medium-low and keep cooking until the onions have a very creamy and almost melting texture, 5 to 8 minutes more. Turn off the heat.

To Make the Dish:

In a medium pot, combine the potatoes and enough water to cover by an inch or so and bring to a strong simmer over high heat. Adjust the heat and simmer until you can cut one of the potatoes in half with no resistance, about 15 minutes. Drain well, reserving 1 cup of cooking liquid. Return the potatoes to the medium pot, add the onion mixture (including the oil), then crush and stir to make a chunky mash. Add the cashew mixture and use a whisk to incorporate the cream into the potatoes.

Gradually add up to 1 cup of the reserved cooking liquid so the mixture has the texture of slightly loose, creamy mashed potatoes. You can do this up to 2 hours in advance.

Move an oven rack to the top position and preheat the broiler. Transfer the mixture to a casserole dish or another shallow ovenproof pot that’ll hold it in a 3- or 4-inch layer. Broil on the top rack until the top is bubbly and golden brown, about 3 minutes. Serve hot.

It’s made with loads of high-quality salted butter and cream! I cook the potatoes with chicken broth to add even more great flavor! What Type of Potatoes to Use?

You’ll love the amazing creamy and fluffy texture this butter mashed potato recipe yields! For the best mashed potatoes, I recommend using Russet potatoes. These thick-skinned potatoes are starchy and yield a fluffy and creamy mash, just perfect for this recipe. Other potato varieties can cause the mashed potatoes to be too watery or too gummy. I try to avoid using red potatoes for this recipe whenever possible!

Preparing the Potatoes

You’ll love how easy this recipe is to make. The first step is washing the potatoes. I like to give them a quick rinse under cold water to get off as much dust as possible. Next, I use a sharp peeler and get rid of the peel and any knots, brown spots or green areas. If you see green on a potato, that means it wasn’t stored properly and may have been exposed to sunlight. Cut away any green parts since those can ruin the flavor of the mashed potatoes.

Keep the peeled potatoes in a bowl filled with cold water to prevent browning. The water will also wash away any last bits of dust. Once the potatoes are peeled, use a sharp knife to cut the potatoes into medium-sized chunks. It’s important that the potatoes are evenly cut! When the potatoes are evenly cut, they cook more evenly, resulting in a creamier and smoother mash!

Cooking the Potatoes

Once you have the potatoes peeled and cut, it’s time to get them cooking! I love to use chicken broth or vegetable broth for my butter mashed potatoes recipe. The broth adds so much great flavor without being overwhelming! Place the potatoes into a large pot, add the broth, the potatoes and enough water to cover the potatoes by a few inches. Next, I add in 3 teaspoons (1 tablespoon) of sea salt. I know that sounds like a lot but potatoes need a lot of salt! Just make sure to taste test the finished recipe before adding more salt.

Bring the potatoes up to boil over high heat, then reduce the heat to medium-high and cook until the potatoes are fork tender and very soft, but not falling apart. The potatoes will boil anywhere from 20 to 25 minutes and the timing all depends on the size of your potato pieces. Larger pieces will take longer to boil.

Mashing the Potatoes

Once the potatoes are cooked and soft, it’s time to make mashed potatoes out of them! I like to drain out all the liquids and transfer the potatoes into a clean mixing bowl. You can do the next steps in the same pot, too. First, I add the butter. I use 1 cup of high-quality, grass-fed salted butter. This butter adds so much incredible flavor to the potato recipe! I recommend using softened butter at room temperature cold butter will cool the potatoes. Allow the butter to melt for a few minutes.

The actual mashing part can be done two ways – manually with a potato masher or with a hand mixer. Both methods will make great mashed potatoes! I find that using a mixer makes the potatoes more creamy. As you’re mashing the potatoes, begin adding a few tablespoons of cream at a time. Don’t add all the cream at once sometimes I only use ¼ cup, other times I use 1 cup. The amount of cream just depends on how dry the potatoes are. Mash and mix the potatoes until no clumps remain and they’re creamy and smooth.

Serving Suggestions

For serving these creamy butter mashed potatoes, I like to top them with more butter! I melt ¼ to 1/3 cup butter in a measuring cup and add a few teaspoons of dill and/or parsley. Arrange the potatoes in a serving casserole, then pour the herbed butter over the top.

Russet potatoes (the classic brown-skinned ones used for baked potatoes) are the classic go-to for mashed potatoes, but you don't have to stick to only those. We like using a mix of russet and Yukon gold, which have a super-creamy texture.

Peel&mdashOr Don't

This is the age-old debate: Should you peel your potatoes for mashed potatoes?! Many people in the Delish kitchen fall into the camp of people who happen to love the texture that the skin add. But it's entirely up to you.

Use All The Butter

Our recipe calls for a whole stick, but real butter enthusiasts might even want to use another few tablespoons. We like to melt our butter with milk in a saucepan so the milk is warm when it hits the mashed spuds.

Use Full-Fat Everything

Starchy potatoes need serious fat to turn them creamy, so skip low-fat varieties for sour cream and milk, which will produce drier mashed potatoes.

Don't Be Afraid of Going Heavy on Seasoning

Mashed potatoes are begging for salt and pepper. Potatoes need a lot of salt&mdashgo heavy! This will help bring out their buttery flavor and ensure they don't taste lackluster.

Add All the Mix-ins

We're obsessed with loaded mashed potatoes&mdashwho isn't?!&mdashso we totally encourage you to stir in shredded cheddar or Parmesan, cooked bacon bits, chives, the works, after you add the melted butter-milk mixture. Truly any fresh herb or cheese will only help mashed potatoes taste amazing.

The Secret to Buttery Garlic Mashed Potatoes (No Gravy or Cream Needed)

Potatoes are Meathead's second favorite food and they go great with my favorite food. I can eat them any way you can cook them and mashed potatoes are essential for Thanksgiving. I recently had some great garlic mashed in a restaurant, without gravy, and they were so delicate, mellow, and sweet. Not that heavy G-A-R-L-I-C breath stuff. I immediately went to work trying to duplicate them. But I failed. I came close when I roasted the garlic first, but no cigar. That's because I didn't know the secrets to great garlic mashed.

I belong to several internet discussion groups, and one day I read a note about garlic mashed from one of the people whose comments I always pay attention to on the SmokeRingBBQ list.

Chef Kurt Lucas of Organic Fresh Fingers develops organic meals for children. He has been the Executive Chef at Oregon State University and he has worked for Michel Richard, the famous French Chef of Citronella in DC.

The secret Chef Lucas taught me, is boiling the garlic to reduce its pungence and increase its mellow sweetness. And lots of butter. Most mashed potato recipes call for cream, half-and-half, or milk. This recipe is so good and creamy you don't need any cream in the mix or gravy on the table. But if you insist, you can mix in some cream or half-and-haf, but taste it first! Another secret, I have learned the hard way, is to mash them only a little with an old fashioned potato masher. When I use my blender it adds too much air and the glutens can get gummy. Besides, you cannot make skin on smashed potatoes in a mixer. Whipped potatoes are another technique and another recipe.

Yield. 4 small servings
Preparation time. 30-45 minutes

Ingredients
2 pounds Russet Burbank or Yukon Gold potatoes, after peeling
6 medium cloves of garlic
1/4 pound unsalted butter (1 stick), cut into 1/2" chunks
6 pinches of salt
1/4 teaspoon fresh ground black pepper (fresher is better)
2 tablespoons of your favorite fresh herbs

About the potatoes. There are many different potatoes to choose from (read my article The Zen of Potatoes). Russets are a great all round tater, fine for for mashing, and Yukon Golds have an especially nice buttery flavor. Select large potatoes because they are easier to peel. Each potato has a slightly different texture and flavor, so experiment until you find your fave. If you clean the skins thoroughly with a brush or scrubby sponge, you can leave them in for more texture, flavor, and nutrition.

About the garlic. If you have roasted or grilled garlic on hand, you can skip boiling the garlic, but frankly, I like the boiled version better. Click here to see how to roast garlic.

About the butter. If you use salted butter, cut back a pinch of salt in the mashing step. Yes, I know that's a lot of butter, but we don't eat mashed potatoes every day, do we?

About the herbs. Fresh herbs are great in mashed potatoe. Try chives or one of the Simon & Garfunkel herbs: Parsley, sage, rosemary, or thyme. Oregano and basil are also great. My favorite is fresh rosemary. That's thyme in the picture above. Click here to learn more about herbs and substitutions.

Optional for cheeseheads. Add 3 ounces grated cheddar cheese or boursin cheese spread. Click here for my recipe for home made boursin.

Optional for carnivores. Add 3 strips crispy bacon crumbled into bits or toss some leftover rib meat or pulled pork in the mix!

Do this
1) We want to begin by de-fanging the garlic of its sulfury pungence and convert it to sweetness by cooking it. Peel the garlic cloves, remove the woody root, and cut them in half. Bring a non-reactive saucepan with a quart of water to a boil and add a pinch of salt and the garlic. Boil the garlic for about 15 minutes. You need lots of water to remove all the pungence of the garlic.

2) While the garlic is cooking, get another pot of water boiling. Don't use the garlic water for the potatoes! Make sure you have enough water to submerge the potatoes about an inch below the surface. Add two pinches of salt. Wash the potatoes and cut them into thumb-sized chunks. Try to get the chunks about the same size so they all finish cookin about the same time. When the water is boiling, add the potatoes and boil them until a fork pierces them with only a little resistance, about 15 minutes, depending on how large the chunks are. Don't overcook the potatoes so that the exterior is mushy and they fall apart when you pierce them. Chef Lucas warns that "overcooked potatoes tend to soak up water and can become runny."

3) Drain the garlic, drop them in the serving bowl, add the butter, three pinches of salt, black pepper, and herbs, and mash everything into a paste with a fork.

4) Drain the potatoes thoroughly. I like mine with some chunks, more smashed than mashed, so I just dump them into the bowl and use an old-fashioned wire masher. If you like yours smooth, use a potato ricer (it looks like a giant garlic press). Squeeze them through the holes into the bowl and mix with a large spoon. Before serving, taste them and add more salt and pepper if you wish.

Optional. Here's where you can add cheese, meat, or cream. I recommend you do the recipe as is the first time, and then riff on it the second time if you wish.

5) Holding mashed potatoes. Getting all the parts of a meal ready at once is the trickiest part of cooking, so if the rest of the meal isn't ready when the spuds are, you can keep them warm in a slow cooker or heat them in the microwave for 2 to 3 minutes just before serving.
