As a child, I hated cauliflower. My parents cooked it in three ways, it was easier for me to come to terms with just one of them, namely the cauliflower. Cauliflower bread and cauliflower soup did not delight me at all. I started to make friends with cauliflower only after I grew up, just as I started to make friends with spinach, zucchini, sarmales, green beans. I found that raw cauliflower is good, if it is seasoned well, I found that cauliflower soup is also good, especially if it has a little meat (even smoked). My favorite way to eat cauliflower is cream, not very sweet, helped by complementary flavors, fine, silky. Let me tell you how you can get four servings of cauliflower cream:

Chop two medium onions and soak them in a teaspoon of butter and a teaspoon of oil, over low heat, dusted with a little salt. After the onion is soft and glassy, ​​place over it 7-800 grams of cauliflower broken into small pieces. Mix well and leave under the lid on low heat for 10 minutes. Cover with meat broth or warm water and simmer until the cauliflower is soft.

Put the contents of the pot in a blender (remain a Vitamix fan) and add 120-150 ml of sweet cream. Mix until you get the desired texture. Put the cream back on low heat for 5-6 minutes. Match the taste with salt, add ground nutmeg, thyme (can be fresh oregano), extra virgin olive oil.
