The source for this cake that is never missing from the holidays, is my mother's recipe book.

For sheets:

  • 2 tablespoons bee honey
  • 1 or
  • 50 gr butter
  • 200 gr sugar
  • 250-300 gr flour
  • ½ teaspoon baking soda
  • Salt
  • Vanilla sugar
  • Lemon peel and juice

For the cream:

  • 1 sachet Vanilla cream from Dr. Oetker
  • 1 sachet Lemon cream from Dr. oetker
  • 100 ml liquid cream

For the glaze:

  • 150 gr household chocolate with milk
  • 100 ml liquid cream
  • 30 gr butter
  • 1 tablespoon oil

The ingredients are for a smaller tray and 4 sheets, or 3 sheets on a larger tray.

Servings: -

Preparation time: less than 120 minutes

RECIPE PREPARATION Sheets with honey:

Beat the eggs with the sugar, then add the soft butter and honey.

Put the mixture on the steam bath for a few minutes until the sugar and butter melt.

Remove from the steam and add the baking soda quenched with lemon juice, vanilla and lemon peel.

Then add the flour until the desired consistency is obtained. The dough should not be too hard to be able to spread the sheets.

Divide into three or four parts and bake the sheets on the back of the tray, on which a baking paper was previously placed.

Baking time depends on each oven, about 25 minutes for a sheet.

Cream:

Prepare according to the instructions on the package. Mix with whipped cream.

Put between the sheets.

Glaze:

Put all the ingredients on the steam bath until the chocolate is completely melted. Then put it over the cake.

I love this Albinita cake, tender, with delicate leaves with honey, soft to melt in the mouth, filled with a delicious cream, vanilla and contrasting so pleasantly with the layer of sour jam in the middle! The cake with leaves with honey and milk cream is one of the childhood cakes. I don't know how it happened that my grandmother didn't have Albinița in her culinary repertoire, but I was very happy to discover her at the neighbors and of course, at all the parties I managed to get to, together with my family.

At the old confectionery in Timisoara from Kiutli, I spent good hours, as a child, with my nose glued to the cake window. Most of the time, my choice was this soft cake with a delicious aroma of honey and vanilla milk, which I could pack and eat by hand, on the way home or to school. Not once did I get home with powdered mustache, but God, it was good!

Through the villages of Banat and Transylvania, Albinița cake is still very popular, rarely missing from the trays with traditional cakes made for weddings and weddings. And how I, together with my friends from Albalact, who collect their milk with buggy and velvety taste only from Romanian farmers in Transylvania, started a few weeks ago in a beautiful culinary journey whose mission is to rediscover the traditions of Transylvanian sweets , this cake could not be missing from their gallery.

1 apple
2-3 tablespoons of raw honey
100 g blackberries (optional)
160 g of oatmeal
600 ml of milk or water
1 teaspoon (maximum one tablespoon) of raw pollen
1 v & acircrf of salt

Remove the back of the apple and grate it. Boil oatmeal with milk or water and salt. After the porridge cools, add the grated apple, raw honey, raw pollen and blackberries. Garnish with blackberries or raw pollen grains.


TUESDAY: Smoothie with pineapple, pasture and raw honey

150 g pineapple
5 g acai (optional)
30 g raw honey
5 g of pasture
30 g cashews & icircnmuiat & icircn water 8 hours
1 drop peppermint essential oil (optional)
200 ml of plain water

Put all the ingredients & icircn blender and mix for 1-2 minutes.


WEDNESDAY: Fruit salad with raw pollen

1 golden apple
1 red apple
1 banana
1 tablespoon raw pollen
1 teaspoon agave syrup

Cut the fruits into pieces and mix them with the raw pollen and agave syrup.


THURSDAY: Shake with raw honey and raw pollen

1/2 cup freshly squeezed grapefruit juice
1/2 cup freshly squeezed orange juice
1 tablespoon raw honey
1 teaspoon (maximum one tablespoon) of raw pollen

Put the ingredients in the shaker and shake well until you get a homogeneous mixture.


FRIDAY: Eggnog with raw honey and raw pollen

2 beaten eggs
2 tablespoons raw honey
2 cups cold milk (can also be soy or rice)
& frac12 teaspoon vanilla extract
a little crushed nutmeg
1 tablespoon raw pollen

Mix well-beaten eggs with raw honey and raw pollen. Then add the milk and vanilla extract and sprinkle the nutmeg on top.


S & AcircMBĂTĂ: Smoothie with bananas, pasture and raw honey

150 g banana
30 g raw honey
5 g of pasture
30 g pumpkin seeds & soaked & soaked in water (8 hours)
400 ml of plain water

Put all the ingredients & icircn blender and mix for 1-2 minutes.


SUNDAY: Pomegranate yogurt, raw honey and raw pollen

150 g of Greek yogurt or homemade yogurt
seeds from half a pomegranate
1 teaspoon raw honey
1 teaspoon of raw pollen
1 tablespoon raw sunflower seeds

How do we proceed :
Mix the ingredients for the sheets and boil them for 4 minutes, stirring constantly. If you want the sheets to be darker in color, leave the mixture on the fire longer, but be careful, the sugar caramelizes very quickly.

When the composition is almost warm enough to put your finger in it without burning, add flour and make a homogeneous crust, which is divided into 4 sheets that are baked on the back of the tray greased with oil for 6-7 minutes until nicely browned. I have been using baking paper for a while, spreading them directly on the baking sheet.

You can also make two baked sheets on the bottom of the stove tray and cut them in half each when they are baked.

Because I made this cake several times, I can tell you that it is quite difficult to spread the sheets but I will write you some tricks when the composition is hot, put only 300g of flour and mix. Then divide the dough into 4 and keep it warm. You can put it in one pot and the pot on another in which there is hot water or on a lid turned over a pot of hot water.

When you spread them on the bottom of the tray, use the flour.

While they cool, prepare the cream:

Boil the milk with semolina and then allow to cool. Rub the butter with the powdered sugar, lemon peel, lemon juice. Put it little by little in the cold semolina and mix well.

Again an observation I simplified the process of preparing the cream by putting the caster sugar directly in the milk, I boil the milk then I add the semolina and when the cream is cold I put all the butter and mix.

Then we make a syrup from 100ml of water and 1 tablespoon of sugar in which we put a little vanilla essence.

Assembly:
Sheet, with a brush we put a little syrup, cream, foil, syrup, jam, foil, syrup, cream, foil.

Powder with sugar and leave to cool overnight to soften the sheets then cut with a sharp knife.

Ingredient:
A pack of 4 sheets of Dolce Iulius honey (very good)
1 liter of milk
350g sugar cough
4 sachets of vanilla sugar
7 tablespoons flour
200g margarine Rama
100g old powder
1 jar of apricot jam 360g

Method of preparation:
The milk, caster sugar, vanilla sugar and flour added in the rain are put in a pan and boiled on a steam bath, stirring constantly, until the composition thickens. After it has thickened, take the pan off the heat and leave it to cool.

Meanwhile, rub the foam, margarine and powdered sugar in a bowl. This mixture is added over the milk cream and the already cooled flour, and mixed until it is homogenous.

After we get the cream, we move on to filling the cake sheets. Take a sheet on which to spread half of the prepared cream, then cover with a second sheet on which we will spread the apricot jam, again, cover with another sheet, over which we will put the remaining cream and again we will cover with another sheet - which is the last.

The cake is placed in the refrigerator, preferably until the next day, so the sheets will become soft. The next day before serving, powder with sugar. It is a fine and delicious cake recipe that is definitely pleasant for the whole family.

Prepare sheets of honey on the back of the tray

We put in a bowl, over low heat, butter, sugar, eggs, milk and a pinch of salt. We intensely mix all the ingredients to melt the sugar and to homogenize the composition. Turn off the heat, let the composition cool, add the honey, the quenched baking soda and icing lemon juice and gradually incorporate the flour.

The resulting dough will be slightly sticky and not very firm, but quite easy to spread on the back of the tray.

We divide the dough for leaves with honey In four equal parts, which we spread, on the back of the tray greased with oil and lined with a little flour. Bake them for 3-4 minutes each, in the preheated oven, at 180 degrees.

Make semolina cream

We put a pot on the fire with the milk mixed with the sugar and a pinch of salt, and when it reaches the boiling point, we gradually add the semolina mixed with the flour. Stir continuously with a whisk, so as not to form lumps.

Boil semolina cream p & acircnă becomes consistent like a pudding, then turn off the heat and add the essence. Cover the cream with foil, on contact, leave it to cool, then mix it with soft butter, lightly foamed & icirc together with a tablespoon of powdered sugar.

Assembling the Albinița cake

We divide the semolina cream into two equal parts. Place the first sheet of dough with honey & icircn tray, grease it with half of the semolina cream, add the second sheet and press it lightly over the cream and grease it with the jam. over the jam we add another sheet of dough with honey, and the semolina cream and the last sheet of dough.

cover Albinița cake with a foil of freshness and we place a weight on it, a wood chipper, an atlas, etc.

We put the tray with sheet cake with honey and semolina cream cold, from one day to the next, or until the sheets are well hydrated and the cake is nicely portioned. Usually, the next day, the sheet cakes on the back of the tray are best served.

Dulcineea Cake (Albinița) it is served decorated with vanilla-flavored powdered sugar.


Albinița cake & # 8211 A creamy cake with honey leaves

We start with the sheets: in a heat-resistant bowl, we mix the sugar, the egg, the honey, the butter, the baking soda and the milk, then we put the bowl on the bain-marie. Stir continuously until the composition acquires the consistency of a cream. After that, take the bowl off the bain-marie, and gradually add the flour. Mix, then transfer the dough to the work surface sprinkled with flour.

Divide the dough into 4 equal parts and bake 4 sheets on the back of a pan greased with butter and sprinkled with flour.

Prick each sheet from place to place so that it does not swell and bake for 5-6 minutes and no more, because it burns quickly.

To make it easier to detach the sheets from the back of the tray, pass the blade of a knife under each one.

For the cream, boil the milk together with the vanilla, lemon peel and sugar. Add the semolina, in the rain, stirring constantly with a whisk, then boil until you get a thick cream. Let the cream thus cooled.

After the cream has cooled, in another bowl froth the butter and add a tablespoon of cream, then at the end the lemon juice.

Place the first sheet on the plate, spread half of the amount of cream over it, then place the second sheet over which we spread a uniform layer of sour jam. Cover the layer of jam with the third sheet, over which we spread evenly the remaining amount of cream and place the last sheet.

Leave the cake to cool overnight or at least for a few hours, then powder it with sugar and slice it.

How to make these sheets with walnuts and honey for tender cakes & # 8211 old, simple recipe?

How to make leaf dough with strawberries with honey and walnuts?

In the bowl of the food processor I placed the eggs, sugar, salt, nuts and hot honey but not hot (just enough to flow well) and I mixed them for 2 minutes. Finally I added the flour with baking soda and mixed them well. I want to tell you that I made them without baking soda and the sheets were still tender.

A crumbly shell comes out, quite hard to knead & # 8230 but it eventually binds. If you knead by hand, I recommend that you first add only 400 g of flour and only then the remaining 100 g.

Weighed the dough and divided it into 4 equal balls (with the scale!) Which are wrapped in food plastic and left to cool for 20 minutes (especially if it is very hot in the kitchen).

How do you spread the walnut and honey sheets?

I took a ball and covered the others with transparent foil because otherwise it dries and cracks. I spread 4 sheets of 26 & # 21534 cm directly on the baking paper (in the past I spread them on the back of the tray but for at least 30 years we have baking paper so it doesn't make sense). It is a dough that is quite difficult to spread. We will work with flour on the work table.

I took a baking paper and folded the edges exactly to the desired size. This way I am guided by those folds and I know exactly what size the dough should be. I sprinkled flour on the baking paper and spread the dough with the rolling pin. I followed the paper guide. To obtain sheets with straight edges, I folded the edges of the paper and passed the twister over.

That's how I got straight edges.

IMPORTANT! It was not in vain that I weighed the dough and divided it exactly into 4! We want equal sheets and that means we use ALL the dough in a ball to spread a sheet & # 8211 means we model it exactly to the dimensions in the recipe! So do not stretch sheets larger than 26 x 34 cm from which to then cut the excess edges! It's stupid because we are left with leftover dough and the sheets will NOT be equal in thickness!

How to bake tender leaves with walnuts and honey?

I preheated the oven to 170 C on the function up + down + ventilation (average stage for gas ovens). I placed it in the tray directly with the baking paper. Do not bake on the back of the tray! I bake these sheets with walnuts and honey for 5 minutes (each, one at a time). At the last minute, however, I kept my eyes on the oven so that it wouldn't burn. If you bake 2 trays at a time, the time is extended to 7 minutes.
