If we use fresh yeast, we make mayonnaise (yeast + 1 lgta sugar + 1 lgta flour over which we pour the warm milk and leave for 15 minutes).

I used dry yeast that I mixed with flour, left for 15 minutes and added the rest of the ingredients except butter.

Form a dough (a bit sticky) and only at the end we put margarine / butter and knead.

Leave to rise for 1 hour.

After doubling its volume, divide the dough into 4 equal parts. Spread each in a rectangular sheet and grease with 2 tablespoons of jam. Put the filling and then roll a little tighter. Roll and cut with a sharp knife, in the middle, to the center We roll 2 of them and put them in a greased and / or tray lined with baking paper.

Let it rise again for 1 hour and then bake for 18-20 minutes at 175 degrees.

After they have cooled, we lubricate them abundantly with icing.

How do we prepare the cake with chocolate, walnuts and raisins?

We start by preparing cream. Put the milk with the sugar on the fire and when they have boiled, put the bowl aside, add the diced broken chocolate and mix vigorously until you get a fine cream.

Let it cool very well. It is preferable to prepare it in the evening, to be perfectly cold for the next day when we start the cakes. It must be a thick cream.

We move on to the kneading of the cakes, starting by sifting the flour in the bowl in which we will prepare the dough.

Cake with chocolate, walnuts and raisins

Over the flour we will add salt and sugar, mixing them all.

Heat the milk a little (to be a little warm), and in it we will put citrus peel, vanilla essence and yolks.

We homogenize them all, and over them we will add the yeast. Pour the obtained liquid over the flour and start kneading.

Kneading the cake

At the beginning we will have a sticky dough, which over time by adding oil will easily come off the hands and walls of the vessel.

It is very important to add the oil gradually. Of the 90 ml of kneading oil, we use only 70 ml, we use the rest when we shape the cozonacs, we grease the worktop with it.

Kneading takes about 20 minutes. After we get the desired dough, we give it the shape of a ball and let it rest for 10 minutes in a bowl covered with cling film.

In these 10 minutes we will take two cake trays and cover them with baking paper.

We take the dough, put it on the worktop greased with oil and divide it into four equal parts.

We will spread each part in the form of a rectangular sheet over which we spread a quarter of the chocolate cream.

Sprinkle nuts, raisins and shit on top. We roll the sheet and put it aside. We will do the same with the rest of the dough.

We knit two pieces each and put them in trays. Sprinkle a little water on top and put the trays in a large plastic bag that you tie tightly to your mouth.

Leave the cozonacs to rise in the bag until they double in volume, and after they have leavened, grease them with egg and decorate them with sesame seeds.

Baking for the chocolate cake recipe

Put them in the preheated oven at 170 degrees Celsius for about 45-50 minutes.

They must be red and pass the toothpick test. You can eat them both hot and cold, they are delicious anyway.

How do we prepare the fasting cake recipe with shit, raisins and halva?

We make a hole in the middle of the flour, add the dry yeast. If you use fresh yeast, dissolve it in a little warm water.

Mix well, add sugar, orange peel or lemon, turmeric (optional) and a teaspoon of grated salt.

Pour 2/3 of the liquid, not all, we will add gradually, depending on how the dough will come out. Also now we add the vanilla essence.

We start to knead the dough, you can knead it on the robot.

Add the oil little by little, it will harden the dough, so we will not put too much oil.

Knead the dough for 10, bring it from the edge to the middle. Cover with a clean napkin and leave it warm for 30 minutes.

Grease the table and hands with oil, pour the dough on the table, knead it on the table, bringing the edges to the middle. We toss the dough into the table 10-20 times, the dough will soften and relax. We knead it for another 5 minutes, after which we leave it to rise for another 30 minutes.

We knead it for the third time for another 5 minutes. We will get a very soft and fluffy dough. Leave it to rise in a warm place for 1-2 hours, until it grows nicely.

Grease the table with oil and turn the dough over, divide it into larger or smaller pieces, depending on how we prefer to work, I divided it in two.

Spread the dough and turn the halva filling, which we chopped into larger and smaller pieces. We roll the dough, we seal the ends, so that it doesn't run, we tighten it very well. Put the cake in the tray lined with baking paper.

We make the other cake the same way and we will fill it with plenty of shit and raisins. We break it into two pieces and weave the cake, after which we place it in a tray lined with baking paper.

Let the cakes rise for 30 minutes.

Baking cozonacs

We grease them with water, so the cozonacs will not crack and will have a very fine skin. We put them in the preheated oven at 160-170 degrees Celsius for about an hour.

We also prepare the syrup that we will use to grease the cakes on top. Put in a bowl 2 tablespoons of sugar over which we add water and mix.

Grease the cozonacs with the syrup while they are still hot, so the peel will soften and be shiny.

We leave them in the trays for 10 minutes, after which we take them out of the tray and turn them on all sides, until they cool completely.

Gina's advice

  • Having no animal protein, the cake will not stay fresh for long. In order to keep it better, I recommend you put it in paper bags and keep it in the fridge, you will take out one piece at a time, while you eat once. It can also be stored in the freezer.

Sift 500 g of flour into a large bowl. Make a hole in the middle of the flour.

Heat the milk to body temperature.

In a bowl, rub the yeast with two tablespoons of sugar until it dissolves. Add a little warm milk (50-100 ml) and mix well. Pour the liquid into the hole in the middle of the flour. Mix with a little flour, cover the bowl with a towel and let the mayo grow in a warm place.

Mix the yolks with a pinch of salt and sugar. They are then placed in the mayonnaise bowl, which has grown in the meantime. Mix everything with a wooden spoon, gradually adding the rest of the milk and oil (heated together to body temperature). Add about 200 g of flour or until you get a thick dough, then divide and put in two clean bowls.

A part of the dough is left white, so add the vanilla essence and fill it with flour, kneading it until you get a fluffy crust. At the end, clean the dough hands, wash them, then grease them with oil and collect the crust from the walls of the bowl, forming a ball. Cover the bowl with foil, then with a towel and leave the crust to rise in a warm place.

The other part of the dough is mixed with rum essence and 30 g of cocoa and filled with flour, kneading it until a fluffy crust is obtained. At the end, clean the dough hands, wash them, then grease them with oil and collect the crust from the walls of the bowl, forming a ball. Cover the bowl with foil, then with a towel and leave the crust to rise in a warm place.

Cut the shit into small pieces.

Rinse the raisins with water and leave them to soak in clean water.

Beat the egg whites with a pinch of salt, then add the sugar and vanilla sugar and mix until they become like meringue.

Turn on the oven to heat.

The dough is divided in two, after they have risen. Spread a sheet of cocoa on the work table greased with oil, add over it 1/4 of the beaten egg whites, leaving the edges free. Sprinkle with nuts, raisins (drained water) and pieces of shit. Roll the sheet. Do the same with the white sheet, then the two sheets are intertwined and carefully placed in a cake pan greased with oil and lined with baking paper.

Proceed in the same way with the other two two-tone sheets.

Let the cozonacs grow in a warm place, then grease them with the yolk mixed with milk and put them in the oven until they are nicely browned. Allow to cool before being removed from the pan.
