We clean and wash the onion, the carrot, the potato. Chop the meat, onion, carrot and potato. In this mixture we will add salt, pepper to taste, chopped parsley and egg, peeled tomatoes and two diced tomatoes. We choose and wash the rice and add it to the meat and vegetable mixture then knead well. We wash the peppers, we cut the lids around the tails, we clean the seeds, we wash them again and we drain them.
Fill each pepper with the meat mixture. In a pot put about 1.5 l of water with a drop of salt to boil. When the water starts to boil, put the peppers in the pot with water and let them boil for about 30 minutes. Remove the peppers with a whisk and place them in a standing ceramic bowl. On each pepper we put a slice of tomato.
We prepare a cream sauce, a tablespoon of flour and peeled and finely chopped tomatoes. Thin a little with a glass of juice in which they boiled the peppers, season with salt and pour over the peppers. Put the dish in the oven heated to 180 degrees C for 30 minutes.
