The green beans are washed and drained. Then cut off the ends with a knife.

The pods are cut into pieces of about 3-4 cm.

Place the cut pods in jars. I don't stuff them too much but I don't leave too much room. The jars must be sterilized.

Observation: if you do not have cool rooms or cellars, then it would be recommended to burn the bean pods before putting them in jars! Put the water to boil in a large pot and when it boils put the pods in it. Let them boil for 5 minutes and then drain them and put them in jars. Pour over them the water in which they boiled and add a teaspoon of grated salt in each jar. Or do it low bean meal with tomatoes, onions and garlic (recipe here) which you put in jars and sterilize.

I didn't choose the version with green beans that I put in the freezer in the summer, but you can just as well use beans from the jar. I put the green beans so directly from the fridge in a little butter (you can also use sunflower oil) and I left it in the pan over low heat with a lid, until the water evaporated and started to harden.

In the meantime, I washed the other vegetables and cut the onion into small pieces, the pepper into slices, and I cut the tomatoes into cubes and made sure that the juice in them did not lose it.

Before I put the other vegetables over the beans, I added another tablespoon of oil and I put the vegetables to harden and left them on low heat, until they become a low food, without too much sauce. 10 minutes before turning off the heat, I added the crushed garlic, salt and pepper to taste.

When I have a thick sauce, I turned off the heat and tossed a handful of chopped green parsley on top.

Ingredient:

  • 500 gr. - green beans
  • 200 gr. - bacon
  • 2 medium-sized tomatoes
  • 5-6 cloves of garlic
  • 1 wand
  • Salt and black pepper
  • Olive oil

  1. Cut the bacon into small cubes. Heat a pan over medium heat, put the bacon in it and brown for 4-5 minutes or until crispy. Remove the cubes on a paper towel to drain the excess fat.
  2. Cover the tomatoes with hot water and let them sit for 4-5 minutes, this way the peel will be removed more easily. Drain the water, peel the tomatoes and cut them into cubes.
  3. Then cut off the ends of the pods and put them in the pan with boiling water. Boil the pods for 4-5 minutes.
  4. Meanwhile, heat a pan over medium heat, pour olive or sunflower oil, add diced tomatoes. Season with salt and pepper, mix and let the sauce boil until the pods are cooked.
  5. After 4-5 minutes keep 100 ml. from the water in which they boiled the pods then drain them.
  6. Transfer the beans to the sauce, add the crushed garlic, water kept earlier and mix. Let the pods cook in the sauce for another 4-5 minutes, at the end they should remain light and crispy.
  7. While the beans are boiling, cut the baguette into slices and place them in the preheated oven at 200 degrees C until golden brown and crispy. Remove the slices from the oven and rub them on one side with the garlic.
  8. Serve green beans with bacon and crispy garlic-flavored bread. Good appetite!
