Easter is one of the favorite desserts of Romanians, attributed to the Easter period. The delicious sweet cheese filling, along with the fluffy top is a perfect combination. The origin of this dish starts from the Jewish culture, called in Hebrew "mata", taken over by Christians and transformed, over time, into a delicious dessert with sweet cheese, raisins and cake dough.

BUCHAREST, April 14 Sputnik, Georgiana Arsene. To prepare an Easter with sweet cheese, those interested should know that they will need two hours: one hour for preparation and one for baking.

The necessary ingredients are: 200 grams of butter, 200 grams of sugar, 25 grams of yeast, the rind of a lemon and an orange, grated, a kilogram of cow's cheese, 2 tablespoons sm & acircnt & acircna, 2 tablespoons flour, 4 eggs, 250 grams of sugar, 250 grams of flour, 2 sachets of vanilla sugar, grated peel of a lemon & acircie and an orange, 1 pinch of salt, 60 ml of milk, 300 grams of flour, 200 grams of raisins .

Put the flour in a bowl, make a hole in the middle and add the eggs, the yeast prepared from yeast, milk and a little sugar and knead, adding all the ingredients. A cake dough is obtained and it is left to rise with a heat source, the recipe is shown.

Separately, in another bowl, add: cow's cheese, sour cream, sugar, lemon and orange peel, a pinch of salt, flour, vanilla sugar and eggs. All this is mixed with the mixer and at the end the raisins are added.

After it has risen, the dough sheet is placed in the tray greased with butter. Form with a machine, on the board, a roll twisted to the thickness of a finger and cut into two. The two pieces intersect with the twister. 550g flour
125ml warm water
125 warm milk
80g melted butter
150g old cough
1 sachet of dry yeast
2 yolks

10g gray
25g flour

100g raisins (here you can put more if you like more)

For anointed Easter:

1 yolk
30ml milk
Honey for greasing after baking

Method of preparation:

We put the raisins in a bowl, pour enough water to cover them and let them soften for 30 minutes - 1 hour, then we put them in a strainer to drain.


Put the sweet cow's cheese in a bowl, add the caster sugar, rum essences, vanilla sugar, lemon peel, raisins, eggs and mix with a whisk until smooth.


In the resulting composition add 10g semolina and 25g flour and mix again with the whisk, until smooth.

The dough, I prepared it in the bread machine, I put the ingredients in the bowl in the following order: warm water, warm milk, butter previously melted in the microwave (attention, the butter must be warm, not hot, at the time when you add it), the yolks, the sachet of yeast, the caster sugar, the grated lemon peel, the flour and the salt. I let the dough knead for 30 minutes and leaven it for another 60 minutes.
If you don't have a bread machine, you can knead the dough by hand, harder than it really is, but it's worth it. Take a large bowl, put flour in it, make a hole in the middle of the flour and add the yeast, caster sugar, vanilla sugar, grated lemon peel, egg yolks, melted butter, warm water, warm milk and a pinch of salt, then start. slowly, slowly knead the ingredients for 20-30 minutes, until you get a dough that does not stick. Cover the dough with a clean towel and leave it to rise in a warm place for 1 hour.


After the dough has risen, turn it over on the work surface (which you grease, previously with a thin film of oil) and divide the dough into 2 equal parts.

From half of the dough we make a round sheet as a tray that we use for Easter, we spread the dough by hand, we do not use the rolling pin.

We take a round tray with removable walls (my tray has a diameter of 26cm) and we cover it both on the bottom and on the edges with baking paper (in order to better fix the paper to the walls, you can, from place to place, grease the tray with butter).
Put the round sheet of dough in the tray and prick it from place to place with a fork.

Divide the other half of the dough into three equal parts, which we roll each one between the work surface and the palm of the hand until we get 3 long rolls (the length depends on the diameter of the tray you use.)


From the three rolls we make a braid in three, as in the picture.


We put the resulting braid in the tray over the sheet of dough, all around, like a circle.
Let Easter rise for 45 minutes.

After 45 minutes, pour the sweet cheese filling in the middle, grease the dough well with the mixture of egg and milk prepared in advance and put Easter in the preheated oven for 45-50 minutes, on low to medium heat.


After Easter is baked, take it out of the oven and brush it with honey or leave it as it is. Leave to cool, then cut and serve.







For this recipe you need the following:

Put the raisins and apricots in a bowl and add any kind of alcohol over them, covering them with water. Adjust the edges of the dough to the shape.

Pour the composition and remove the excess dough with a knife. The remaining dough is spread on the surface, divided into 2 and the sides of a cross are formed, which is then placed on Easter. Put the rest of the fruit and put the easter in the oven for 1 hour at 180 ° C.

Beat an egg and add the milk over it. This composition is poured over the Easter egg that has been in the oven for 20 minutes. Good appetite!

Easter cheese and raisins, without dough, is a healthy, traditional Easter product, perfect to eat even when it's cold. It is very easy to prepare and does not take much time!

Ingredient:

  • 1 kg sweet cottage cheese (preferably soft cheese in a bucket)
  • 200 gr cream
  • 200 gr sugar
  • 50 gr butter
  • 150 gr raisins
  • 4 eggs
  • 200 gr semolina
  • a sachet of vanilla sugar
  • a sachet of baking powder

Method of preparation:

Beat the eggs and sugar with a whisk until they are smooth. If you beat the eggs too much, the Easter will leave. Incorporate the cheese, then add the cream and mix until a homogeneous paste is obtained. Add the semolina in the rain and mix gradually, then add the baking powder and vanilla sugar. At the end, add the raisins and mix. Meanwhile, preheat the oven to 180 degrees and grease a baking tray (preferably a round one) with butter. Pour the composition into the pan and put it in the oven. When the Easter eggs are 40% browned, lower the oven temperature to 150 degrees and bake until well cooked and completely browned. The cooking time is about 30 minutes.

Easter can be personalized, garnish as you like, can be covered with fruit jam or even chocolate.

You can prepare this dessert at any time of the year, not just for Easter. It is a good product for diabetics, if you use sweetener instead of sugar. And for those who are gluten intolerant, they can replace semolina with ground almonds.
