Sizzling Tofu
Try this easy and delicious Sizzling Tofu recipe that is inspired by Max's but with a spicy twist. You can serve it as an appetizer or side dish and also perfect as a beer chow.
The sizzling Tofu of Max Restaurant, a popular restaurant chain in the Philippines, is one of their most beloved and famous signature dish. Well, next to their fried chicken, of course.
It is the vegetarian option in their sizzling specials menu which mostly consist of meat, like pork and chicken.
This recipe requires very few and simple ingredients. Firm tofu, bell peppers, garlic, onions, mayonnaise, and oyster sauce is actually all you need. But if you like, you can add some chilis to give it an added kick.
I am used to frying tofu as a whole block and just cutting it once it is fried, this is how it is done usually, well in our house at least. It is easier and faster that way, especially if you are gonna fry a lot of tofu.
However, I want my sizzling tofu to look like that of Max's, I had to cut them into cubes first and fry them.
If you would like to take the faster and easier route in browning the tofu cubes, you can deep fry them.
But since I am only making this dish only for two, I find it a waste to use too much oil for just a block of tofu so I just fried them in a small pan with enough oil.
If you do not have a sizzling plate, like this one below from Amazon, a cast iron skillet would also do perfectly fine.
I now have one but not at the time when I made this, about a week ago, though I still got me one for future use, my cast iron skillet did a perfect job. It should as they are both of the same material anyway.

Although listed as a food or beverage when crafting, the consumables in this category do not override the effects provided by using one of the "normal" foods or beverages outside of this category. Each type of leveling bonus consumable, Experience Points and Alliance Points, has its own separate buff slot -- meaning they do not override each other and so you may have one of each at the same time in addition to a normal food or beverage bonus. Different levels of the same bonus type (XP or AP) are not able to be active at the same time. Consumable bonuses for leveling may be used in tandem with bonuses provided by event items, such as Breda's Bottomless Mead Mug or the Scroll of Pelinal's Ferocity.
Max’s-Style Sizzling Tofu Recipe
Max’s is a famous Filipino restaurant chain and a lot of people including myself are a huge fan of their signature dishes that mostly caters to the Filipino palate. They serve a variety of Filipino recipe, their most well known and best-selling dish is their signature fried chicken.
I almost always order their fried chicken until I decided to venture out and try some other Filipino dishes in their expansive menu (almost every one of their dishes follows top-notch quality Filipino recipes). And that’s when I discovered their deliciously prepared sizzling tofu dish which was highly recommended by my friends.
Max’s sizzling tofu is practically the most perfect sizzling tofu I tried and it seems like its a close second public favorite right next to their best selling fried chicken. Their sizzling tofu is full of texture, creamy but not cloyingly so with just the right mix of ingredients that combine them in the best way possible. The tofu is masterfully prepared with the bell peppers, onion, and garlic cooked to a crunch keeps the mayonnaise that coats the dish from being overwhelming.
There’s also a hint of oyster sauce and dried parsley flakes for some added zest to the dish. Plus, some hot chili gives it that extra satisfying kick in its flavor. All in all the perfect healthy dish to serve to your everyday Filipino family.
It’s easily become the favorite dish on Max’s menu for everyone who tried it, along with their fried chicken, of course.
So naturally, I wanted to recreate this sleeper hit in my home myself. It’ll be a great dish to serve to your family and while it’s a relatively simple dish to prepare and cook, people who took a bite out of it will be heavily impressed.
I searched for some of Max’s style sizzling tofu recipes online, tried and recreate a few of them and the closest recipe to Max’s original sizzling tofu I found, taste-wise, is from a site called kusina101 which will be linked down below. Of course, I’ve tried and modified a few things in the recipe which I think would get it exactly to where Max’s sizzling tofu is taste-wise.
First, off to the market I go. I got myself 500-grams of Chinese tofu, chillis, garlic, white onion, bell pepper, mayonnaise, dried parsley flakes, and oyster sauce. I’m also gonna be using some sugar and grounded black pepper. Apart from the Chinese tofu, Max’s style sizzling tofu only needs simple ingredients that you can find in the pantry so I find this recipe relatively cheap to make as well which is always a bonus.
I first heat some oil in a deep pan and while I’m waiting for the oil to heat, I cut up the tofu into symmetrical square pieces. Once the oil is hot enough, I put the tofu into the deep pan and fry it until it turned into a golden brown color. Turn the heat off, get the tofu out of the pan and drain the excess oil into paper towels.
Next, in a bowl, I combined ½ cup mayonnaise, 3 tablespoons of oyster sauce, 1 teaspoon of sugar, ½ teaspoon of the dried parsley, and ½ teaspoon of grounded black pepper. I mixed these ingredients well then added some water until I’ve achieved just the right amount of thickness I wanted in the mixture, exactly like what we can find in Max’s sizzling tofu dish.
I heat the mayo mixture in a clean pan for two minutes in low heat, added 1 finely chopped bell pepper and continue to stir it with the mayo mixture for another one minute.
For the final and most exciting part of this process, on a sizzling plate, I added a little amount of vegetable oil and sauteed three minced cloves of garlic and 1 chopped white onion. Then I added the cooked tofu and mayo dressing on the plate and mixed them well. Finally, I sprinkled the dish with 2 sliced finger chillis and more onion.
Serve with fluffy white rice and I’ve achieved homemade Max’s style sizzling tofu.

- 2 tablespoons olive oil
- 1/4 cup minced onion
- 1 tsp. minced garlic
- 2 tablespoons cornstarch
- 4 cups chicken broth
- 1 10 ounce can diced tomatoes with chiles (Rotel)
- 2-3 cooked boneless, skinless chicken breasts, cut in bite size pieces
- 8 ounces mild cheddar cheese, shredded
- 4 corn tortillas, diced
- 2 tablespoons lime juice
- 1/2 teaspoon cumin
- 1/4 teaspoon oregano
- 1/4 teaspoon salt
- Tortilla strips and diced avocado, optional, for garnish
- In a large pot, heat the olive oil over medium-low heat Add the minced onion and garlic and cook until the onion begins to turn translucent
- Whisk the cornstarch into the chicken broth. Add the broth mixture, chicken, cheese, corn tortillas, lime juice, tomatoes, and all the spices.
- Increase the heat to medium and stir constantly to help the cheese melt. When the soup comes to a bubble, reduce the heat to medium-low and simmer for 20 minutes. Serve topped with tortilla strips, diced avocado, and extra shredded cheese.

The quickest way to prepare the mackerel is to take the fillet from either side of an ungutted fish, bait-cutter style – i.e., slicing from head to tail as close as possible to the backbone. Wipe any blood or guts from the board you are working on as you go. The whole frames (i.e., skeletons with heads and tails still on and guts attached) from which the fillets have been taken can be kept and frozen, then used later for pot bait.
Mix together all the ingredients for the cure. Sprinkle some cure lightly over the bottom of your chosen tray, box, or dish, then place the first layer of fillets on it skin side down, with the thin edges just overlapping. Then sprinkle another, slightly thicker layer of cure over. Arrange the next layer of mackerel skin side up and sprinkle over another layer of cure, then place the next layer skin side down (as shown, above left). Keep going until you’ve used all your fish, or filled the dish.
Put the board/lid/plate on top of the final layer and weight it down with a brick, storage jar, or whatever comes to hand. Place in the fridge. You can eat the gravad max after 24 hours, but 48 is best. For really big fillets, you could wait for 72 hours. Remove the board and lift out the fillets carefully, one at a time. Give them a very quick rinse and then pat dry immediately with a clean cloth or paper towels.
You could serve whole fillets, leaving the problem of cutting it away from the skin and avoiding the pinbones (which are still there, running down the middle of each fillet) to your guests. Or, you could be kinder and trim the fish before serving. So, place the cured fillet on a board, skin side down, and run a flexible filleting knife between the flesh and the skin. Alternatively, you can sometimes just start the process with the knife, then peel the skin off with your fingers.
Now slice the skinless fillet off either side of the pinbone line to give you 2 long fillets – and a very thin waste piece in the middle with the pinbones in it, which you should discard. The belly-side fillet may require a final trim to remove the fine belly bones.
For the sauce: mix the mustard, sugar, and vinegar together. Add the dill, mix well, and leave to macerate for a few minutes. Mix again, then stir in the crème fraîche. Serve the mackerel – 2 whole fillets or 4 trimmed pieces per person – with the creamy sauce on the side and plenty of brown bread and butter.
